I poached the previously undercooked chicken breast in its pan sauce plus some more wine. It turned out pretty darn well, and I'm starting to realize that perfect chicken is probably just a few seconds past undercooked. With it I finished off the rice.

I think next time I'll make a bigger batch of rice.

I have a pound of ground beef that needs to get used soon, so I'll probably just make burrito meat Tuesday. That reminds me, I have some refried beans I should move from the freezer to the fridge.
